One Hour Yeast Rolls

“With bread all sorrows are less.” Sancho Panza in Don Quixote

Wow, Sancho. That is some deep stuff. I don’t if the rolls can quell your deepest sorrows, but they can make dinner time easier and tasty.

I am asked regularly if my kids eat rice. Yes, my kids  eat rice.  Yes, they eat it almost everyday.  Folks around here  are often surprised by this information because they are under the impression that we, Americans, eat nothing but bread and cheese. As much as I wish that was true, it is not.  Cheese is expensive. Tasty homemade bread is a forward thinking process.  Start in the morning to have bread by dinner.

Or is it? Nope, not anymore.

These rolls are done in an hour.  No joke.  I would never joke about bread... or cheese.  These two things are way too important.

10-40-20.  Say it with me.  10-40-20.  Mix for 10 minutes.  Rise for 40 minutes.  Bake for 20.

There you have it.  Hot.  Homemade. Delicious.

Thanks to Joy for passing this recipe onto a friend who passed it on to me.  Now I am passing onto you.  It's your turn.  To whom are you passing this recipe?

One Hour Yeast Rolls

Makes 2 dozen rolls

Ingredients:

4 1/2 tsp yeast

1/4 cup warm water

1 1/2 cups warm buttermilk

1/4 cup sugar, divided

1/2 cup oil1 tsp salt

4 1/2 cups flour

1/2 tsp baking soda

2 T butter, melted

Directions:

Dissolve baking soda in milk.  In large mixing bowl dissolve yeast in water, add 1 tsp sugar, stir and let foam.  Add milk, remaining sugar, oil and salt.  Add one cup of flour and mix well with a whisk.  Then add remaining flour and mix with a wooden spoon. Add more flour if needed to make a slightly sticky dough.  Knead in bowl.  With floured hands shape dough into small balls and place into greased cake pans close together.  The rolls will push each other up while rising.  Let them rise for 30-40 minutes.  Brush with melted butter and bake in a 400 degree oven until lightly browned.  About 20 minutes.
